Thai Beef Massaman Curry with Potatoes
This recipe is a real crowd-pleaser! I love making this for when my family gets together because it a meal that everyone will enjoy, no matter what age!
It's also great comfort food too, just imagine yourself snuggled up on the sofa on a cold winter evening with about a dozen jumpers and blankets to keep you warm, digging into this delicious Thai beef Massaman curry whilst watching I'm a celeb on TV... sounds like a perfect evening to me!
This Thai beef massaman curry dish takes just over an hour to make but it is so worth it, trust me! Preparing the ingredients is super easy, everything is chopped into bitesize chunks. The onions and potatoes are peeled and cut in half and then quarters. For those larger potatoes, it might be better to cut them into sixth's. The cherry tomatoes can also be cut in half too! You absolutely can't go wrong with this dish, follow the recipe below and there's a video tutorial to help you along the way!

Thai Beef Massaman Curry with Potatoes
Ingredients
- 1 tbsp Vegetable Oil
- 35 g Mae Jum Massaman Curry Paste
- 1 tbsp Fish Sauce
- 1 tbsp Palm Sugar
- 400 ml Coconut milk
- 350 g Stewing Beef
- 300g g potatoes
- 200 ml Water
- 2 small onions
- 50 g Cherry Tomatoes
- 50 g Peanuts
- Red chilli optional
Instructions
Preparation
- Peel and chop the potato and onions into chunks
- Chop the cherry tomatoes into halves
- Cut the beef into 1 inch cubes
- Pan roast the peanuts
Method
- Heat oil into a large saucepan on medium/high heat, then stir-fry curry paste to build aroma.
- Add 100ml water to loosen the mix, and then blend in fish sauce and palm sugar
- Add beef, bring to a light boil, cover and cook for 10 minutes. Add the remaining water, cover and simmer for a further 20 minutes
- Then add coconut milk, potatoes and onions and bring back to an uncovered simmer for 20 minutes
- Add cherry tomatoes and roasted peanuts, stir well before removing from heat.
- Garnish with thinly sliced red chilli just before serving (optional) and serve hot with freshly made Thai Jasmine rice
