Thai Red BBQ Chicken Drumsticks


This was definitely a summer to remember! I cooked BBQ chicken drumsticks in a red curry sauce marinade and the results were just delicious. The smokey but spicy flavours in every mouthful were amazing, you can definitely try with other pastes in the collection - depending on how spicy you want your chicken.

For a milder version but still similar taste use Panang curry paste instead of Red. For an even spicier version, use Jungle curry paste as there is more chilli and black pepper, equally as delicious especially if you like spicy hot wings! I chose a medium spiced Thai paste for this time as there were a couple of people who could handle spice and some who couldn't, so the Red curry paste was a fab in between. Red Curried BBQ Chicken

Add a little heat to your BBQ menu this summer with red curried chicken drumsticks!

  • 1 kg Chicken Drumsticks
  • 70 g Mae Jum Thai Red Curry Paste
  • 400 ml Coconut Milk
  • 1 tbsp Fish Sauce



  • Heat coconut milk in a saucepan and blend in the curry paste until smooth
  • Add fish sauce and mix well
  • Score the chicken drumstick to allow the sauce to reach inside the meat
  • Coat the chicken drumstick in the red curry sauce, cover and allow to marinate for at least 2 hours. Best to prepare the day before and leave in the fridge over night

Cooking Method

  • Take your Red Curry Chicken Drumsticks and cook over hot charcoal
  • Turn the chicken from time to time, and ensure that the meat is cooked all the way through
  • If you have any marinating sauce leftover, add it to a saucepan and simmer for 15 minutes, you can use this as a sauce to coat the drumsticks
  • All ready to serve as part of your BBQ feast!
