Thai Green Curry with Beef

Thai Green curry is a classic for everyone, and there are so many different ways you can cook your Green curry. Beef isn't usually cooked in a Thai green curry, but it's an excellent protein if you love bolder flavoured meats. Sometimes Thai green curries can be same-y, so why not try something new and experiment cooking with different meats such as Beef! I've not so much changed the game with this recipe but trying to think outside the box a little, what do you think, will you give this recipe a go? Beef Thai Green Curry with Marrow

Cook something different with this beef and marrow recipe!

Ingredients

  • 35 g Mae Jum Green Curry Paste
  • 400 ml Coconut milk
  • 300 g Beef (Rump)
  • 150 g Carrots
  • 250 g Marrow
  • 20 g Mixed Chillies
  • 400 ml Water (for a thinner sauce if desired)
  • 1 tbsp Fish Sauce
  • 1 tbsp Palm Sugar (or brown sugar)
  • 3 kaffir lime leaves
  • Thai basil (Handful)

Preparation

  1. Thinly slice the mixed chillies

  2. Cut the marrow 2 inch size chunks

  3. Chop carrots into small pieces

  4. Thinly slice the beef

Cooking Instructions

  1. Add quarter of the coconut milk and curry paste to a large saucepan and bring to a light boil. Blend together well

  2. Add the fish sauce and palm sugar and blend well

  3. Add the beef and simmer for 3 minutes.

  4. Add the marrow and carrots into the saucepan with water and the rest of the coconut milk, and let it boil for 7-10 minutes

  5. Turn the heat off and add chillies and Thai basil, gently stir together. Serve hot with freshly made Thai fragrance rice
