Why does it taste so authentic...

I was born and raised in Thailand, where there was an abundance of herbs, spices, fruits and vegetables growing around my family home. It wasn't in a garden or vegetable plot, it was just here, there and everywhere! From a young age, I was often the one asked to blend the herbs and spices in a stone pestle and mortar, until my arm was about to fall off. I didn't enjoy it, but in hindsight, it taught me all I know.

Today, my family's traditional blend of newly harvested herbs are stone ground to make a fresh paste, which is combined with a mix of whole spices that have been pan roasted to extract the natural oils before being finely ground.

We do not add any sugar, oil, shrimp paste or any artificial preservatives, additives or colouring to our fresh blend which is then mildly pasteurized to retain the natural qualities and goodness so you can enjoy that distinctive aroma of fresh herbs and spices when you open the packet.

How many servings does each pack make?
Each 70g pack can produce between 6 - 8 servings when following a Mae Jum recipe. The serving quantity could differ depending on the amount of ingredients you add or the level of spiciness you prefer.
How spicy are Mae Jum Thai pastes?
Mae Jum Thai pastes have a range of spice to offer from mild to very hot. The spiciness can be adjusted to suit your preference by adding more paste for a hotter dish or using less if you prefer a milder flavour.
There will also be a spice rating in the desciptions for all products as well as flame displaying the heat.
Green Flame = No Spice
Yellow Flame = Low to Medium Spice
Orange Flame = Medium Spice
Red Flame = High Spice
What seasonings can you add?
To cook the ultimate traditional Thai dish, you may want to add the following ingredients: Fish sauce, palm sugar or shrimp paste. Although you can still produce a beautiful Thai meal without these extra ingredients from using Mae Jum Thai pastes.
How to store once opened?
Once opened, reseal the sachet and place in the fridge. Our pastes are naturally preserved with salt and can be kept in the fridge for serveral weeks.
What variety of recipes can you make?

This paste is as good as it gets and the end result is as authentic as it comes. Just make sure you follow the recipe on the Mae Jum site and, more importantly, add the extra ingredients that have been ommitted from the sauce sachet to allow you to adjust for personal taste. These include Palm Sugar, Kaffir Lime Leaves and a tiny amount of Fish Sauce.
